乳制品质量安全的风险评估及预警在保障乳制品安全中具有重要地位。文章对影响乳制品质量安全的三类危害因素进 行分类讨论，并详细论述针对这三种危害因素进行相关风险评估的研究，接着梳理乳制品安全风险预警的概念及意义，最 后总结风险评估及预警在乳制品安全监管中的重点和难点，并展望了未来的研究新方向。

The risk assessment and early warning of dairy quality and safety played an important role in the protection of dairy safety. In this review, three types of risk factors that affected the quality and safety of dairy products were classified and discussed, and the research on risk assessment of these three types of risk factors were discussed in details. Then, the concept and significance of dairy product safety risk early warning were reviewed. Finally, we summarized the key points and difficulties of risk assessment and early warning in dairy product safety supervision, and predicted to some new research directions in the future.
